  1. Step 1: Marinate the meats: In a large bowl, combine all marinade ingredients. Divide the marinade equally among three ziplock bags. Add steak to one bag, chicken to another, and shrimp to the last one. Seal and marinate in the refrigerator for at least 1 hour, preferably 2-3 hours. Since shrimp marinate quickly, do not marinate them longer than 30 minutes.
  2. Step 2: Cook the meats: Heat 1 tablespoon of vegetable oil in a large skillet or griddle over medium-high heat. Remove the steak from the marinade, letting excess drip off. Cook the steak strips until they are browned and cooked to your preference. Transfer to a plate and cover with foil to keep warm. Repeat the process with the chicken, and then with the shrimp, adding more oil as needed. Shrimp will cook quickly, about 1-2 minutes per side, until pink and opaque.
  3. Step 3: Sauté the vegetables: In the same skillet, add the remaining oil and increase heat. Add the bell peppers and onion, seasoning with salt and pepper. Cook, stirring frequently, until vegetables are tender and slightly charred.
  4. Step 4: Assemble the fajitas: Return all cooked meats to the skillet with the vegetables to reheat briefly. Serve the mixture sizzling hot, accompanied by warmed flour tortillas and your choice of toppings.
