DELICIOUS HEALTHY COOKIES

Cookies are my absolute favorite treat! They are so delicious and sweet, especially when warm right out of the oven. Typically, however, they are loaded with lots of sugar and other unwanted ingredients. So, I went in search of a healthy alternative. After trying several recipes, I finally crafted one that is yummy, healthy, and the whole family enjoys. These cookies are free from gluten and refined sugar while also packed with nutrients. As a bonus, they can be made in a food processor for quick and easy execution. So, tonight you can enjoy a warm batch of DELICIOUS HEALTHY COOKIES right out of the oven as well!

The main two ingredients are nuts and dates.  I use almond flour and macadamia as my nuts of choice, however walnuts work great instead of the macadamia nuts as well! 

For the juiciest dates I find medjool to be the best.

Since we are not using gluten, the combination of baking soda and apple cider vinegar help to give the cookie a little rise.

I use an egg in this recipe. (For a vegan version, simply use an egg substitute.)

My family loves these. I hope you enjoy as well!

Makes about 12, 1 in cookies. Takes about 15 minutes to prepare.

INGREDIENTS:

  • 1 cup Almond Flour
  • 1/2 cup Macadamia Nuts
  • 1 cup Dates, pitted, well packed
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 tsp Apple Cider Vinegar
  • 1 Egg
  • 1 tsp vanilla extract

INSTRUCTIONS:

Preparation Time: 15 minutes

Cooking time: 12 minutes

  1. Preheat oven to 350 degrees.
  2. Place almond flour, macadamia nuts, and dates in a food processor and process until they have a coarse, crumbly texture.
  3. Add the remaining ingredients and process until well combined. Texture should be a little sticky.
  4. Roll cookies into 1 in balls and place 1 in apart on parchment lined baking sheet. You may need to add a little water to your hands to prevent sticking.
  5. Press cookies down gently with fingers as they will not spread much during baking.
  6. Bake in preheated oven for 12 minutes or until slightly golden brown.
  7. Let cool for 10 minutes. Enjoy!
