Chicken Parmesan
When I was a Senior in High School, I took a cooking class. The teacher taught us how to read recipes and prepare meals. Our group would cook a meal and invite a teacher to join us. Our cooking teacher would help us along the way and evaluate how we did. My dish was Chicken Parmesan.
Ingredients
Servings: 4 people
Prep time: 20 minutes
Cook time: 20 minutes
- 2 chicken breasts
- 1 23 oz jar of maranara
- 1 loaf of italian bread
- 1 stick of garlic flavored butter
- 1 carton of italian seasoned bread crumbs
- 1 16 oz box of angel hair pasta
- Olive oil for frying
- pinch of salt
- Mozzarella cheese to taste
- Parmesan cheese to taste
Instructions
Chicken ParmesanThis is my version of Chicken Parmesan
- Start with 2 fresh chicken breasts
- Butterfly the breasts and then cut into 2 fillets
- Put in a plastic bag and pound the fillets to about a quarter inch in height
- When all four fillets are done mix 3 eggs together in a bowl and put some boxed Italian bread crumbs on a plate
- Take the chicken fillets and drench them in the eggs, then put them in the bread crumbs
- Fry in a pan with olive oil for approximately 3 minutes on each side (until done)
Now we'll make some angel hair pasta.
- Put 2 cups water into a pot
- Put a pinch of salt in the pot
- Bring the water to a boil
- Put one 16 oz box of Angel Hair pasta in the boiling water then cook without a lid for approximately 4 minutes
- When done strain the pasta
Ready for some Garlic Bread?
- You can bake the garlic bread while the pasta is resting and the sauce is simmering on low
- Slice a loaf of Italian bread diagonally in 1/2 to 1 inch slices
- Spread some pre-made garlic butter and on the bread slices
- Put the bread in the oven for approximately 10 minutes
- Check after 5 minutes to see how it is doing

Put the pasta on a plate cover with some marinara
Put the chicken on the pasta cover with marinara
Add Parmasan cheese and Mozzarella cheese
Add the bread to the table
Enjoy!
A Cabernet or Chianti would pair well with this dish
You could serve this as a sandwich as well
