Cheddar And Carrot Bites

A Background Story Regarding This Dish

It was Thanksgiving 2025 that I was tasked with bringing multiple appetizer dishes to my brother and sister-in-laws place who were hosting the large gathering that year. On top of that, I had to keep the dishes meat free since some of the guests were vegetarian. After searching multiple cooking websites, I had four solid appetizers to create for that evenings events. While they all turned out incredible and were devoured within the first hour of arrival, these cheddar and carrot bites were the biggest hit among everyone in attendance and I couldn't agree more that they are a must for any party or just an evening at home with the family. The taste and texture of this hot snack are outstanding and I'm going to show you just how to mix and bake these up so that you can taste it for yourself and know exactly what I am talking about.

The Ingredients

  • 100 g bread (2 medium slices)
  • 1 large carrot, grated (185g/6.5 oz)
  • 100 g cheddar cheese, grated (1 cup)
  • 1 tsp smoked paprika
  • Salt
  • Black Pepper
  • 2 eggs
  • Oil to grease the tray

The Process

Step 1: Preheat the oven to 375° and get that bread broken up into breadcrumbs by either grinding it up in a food processor or you can use your hands and pull it apart into small pieces.

Step 2: Toss those breadcrumbs into a mixing bowl along with the grated carrot and grated cheddar cheese. Stir it all together making sure they are well combined.

Step 3: Now add in the two eggs as well as the salt, pepper, and paprika and give it all another stir until it's nicely mixed.
Step 4: Shape the mixed ingredients into small ball shaped bites and place them on a well oiled baking sheet. This recipe should make around 15 bites but that number will vary depending on the size. Now put them in the 375° oven for 30 min. Check to see that they are nice and crispy and after letting them cool for around 5 min, eat them and enjoy.
