  1. Bring water, quinoa and salt to boil
  2. Reduce heat, cover and simmer until quiona is tender, about 15 minutes
  3. Transfer to large bowl and fluff with fork, let cool
  1. Heat oil in large skillet over medium-high
  2. Add zucchini
    1. cook zucchini, stirring occasionally, until tender and golden, about 7 minutes
  3. Add garlic
    1. cook garlic until fragrant, not brown, about 30 seconds
    2. season with salt and pepper and add to quinoa
  1. Stir in scallions, pistachios, lemon zest and juice, and mint.
  1. Season with salt and pepper to taste
  1. Enjoy!
